Frisch getrocknete Dorsche oder Kabeljau, Schellfische und Seelachse werden als Stockfisch, gesalzene und von einem Teil der Mittelgräte befreite und getrocknete werden als Klippfisch bezeichnet. Der Kabeljau oder Dorsch wird 1 bis 1,5 Meter lang und bis zu 50 kg schwer, er bewohnt vorzugsweise den nördlichen Teil des Atlantik, einschließlich der Nord- und Ostsee. Die erwachsene Nordseeform wird als Kabeljau, die Ostseeform und jugendliche Fische der Nordsee werden als Dorsch bezeichnet. Der Schellfisch wird meistens nicht länger als 50 cm und höchstens 10-12 kg schwer. Er bewohnt ebenfalls den ganzen Nordatlantik.
